what's cooking wednesday - apple muffins

So we went apple picking and then I had apples coming out my ears. So I made some pies and some apple butter and I still had a lot of apples left. Hmmm what else to do.... apple muffins. A nice break from the oatmeal chocolate chip ones the girls love.

Apple Cinnamon muffins

3/4 cup milk
1/4 cup vegetable oil
1 large egg
2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 cup chopped apple

Heat oven to 400 degrees F. Grease the bottoms of a muffin tin or lie with paper baking cups.

Beat milk, oil and egg in a large bowl with a fork or wire whisk. Stir in flour, sugar, baking powder, salt and cinnamon until flour is moistened. Batter will be lumpy. Fold in apples. Divide batter evenly among the muffin cups. Bake for 25-30 minutes.

Recipe Notes: I didn't make any changes here. A quick and easy recipe that I will certainly add to my lunch treats rotation.
