How's Your Middle?

Hmm I think I overbaked my cheesecake. I didn't crack it, but I may have overbaked it. Cheesecake is a tricky thing to bake well. Most people bake unknowingly bake their cheesecake too long. When a cheesecake is done the middle should still be soft and jiggly. My middle is neither soft nor jiggly.... the middle of my cheesecake that is, my own personal middle, well that's another story. Now to keep your cheesecake from cracking as it bakes you should place a pan of hot water on the rack beneath your cake in the oven. It creates a nice moist cooking environment. Now to maintain those conditons it's important not to open the oven during baking. No peeking. Now that makes it incredibly difficult to check the state of your cake as you approach the end of your cooking time. This was my first time using this particular recipe so I set my timer for the shorter of the cooking times suggested. It seems that time was a bit too long since I now have a nice firm middle... again the cheesecake middle, not mine *sigh*. I remain hopeful that my cheesecake failure will not ruin Mike's birthday in any way.

Yes folks it is Michael's 33rd birthday tomorrow. We had dinner at Dad and Linda's tonight. Poor Dad had to bbq out in that nasty frigid weather. I swear it was about 40 below today. Dinner was great, the company even better. Just a nice way to spend a birthday. Abby helped Grandma Linda decorate Mike's birthday cake. Copious amounts of sprinkles were used. She was very proud of herself. Abby and I both snapped pictures tonight, but I'll post them tomorrow. I'm feeling a little sleepy and since Maya's already sawing logs that's my cue to head up to bed too. Night all!
