What's Cooking Wednesday - Sizzlin' Chicken Skewers and Thai Kabobs

Well barbecue season is upon us. I've actually never been too adventurous when it comes to the ole grill. We usually just use it for hamburgs, hot dogs and the occaisional steak. I've decided to expand my grilling horizons this season and this recipe was a perfect start. Since I'm all about teo for one deals. Here's two chicken Skewer recipes for you.

Your Free Kitchen Tip: These recipes call for a marinade. A great time saving tip is to mix your marinade up and freeze it and your meat together in a ziploc bag. All you have to do later is pull it out of the freezer and let it defrost. You'll have nicely marinated chicken waiting for you to throw on the grill when you get home.


2006-06-03 001 Sizzlin Chicken Skewers


Sizzlin' Chicken Skewers

1/3 cup hot water
1/4 cup original bbq sauce
1/4 cup peanut butter
1/4 cup soy sauce
1/4 cup chopped cilantro
2 tbsp mustard
1/8 tsp ground red pepper
1 lb boneless, skinless chicken breasts cut into 12 thin strips

Mix water, bbq sauce, peanut butter, soy sauce, cilantro, mustard and pepper in a medium bowl with a wire whisk.

Pour half of the marinade in a resealable bag. Add chicken; seal bag. Shake to gently coat chicken. Refigerate 1 to 2 hours to marinate. Refridgerate remaining sauce for dipping.

Preheat barbecue to med-high heat. Thread chicken onto skewers in a ribbon fashion; discard any remaining marinade in bag.

Grill 5 - 7 minutes or until chicken is cooked thorugh. Serve with reserved dipping sauce.


What we would/did change; Well first off I have made this recipe omitting the cilantro and it's still fantastic. I also use all the sauce as the marinade since Mike was too keen on the taste of just the sauce. Also make sure you soak your wooden skewers in water first. Makes them a little easier to handle on the barbecue. Everyone who I have served this dish too has loved it, even Abby.

Thai Kabobs


Thai Kabobs

1/2 cup Miracle Whip
1/2 cup peanut butter
1/2 cup chicken broth
1/4 cup honey
1/4 cup soy sauce
1 tsp garlic powder
4 - 6 drops hot pepper sauce
1 lb boneless skinless chicken breasts cut into strips

1. Mix Miracle Whip, peanut butter and broth in a small bowl. Add honey, soy sauce, garlice powder and hot sauce. Stir until blended.

2. Set aside half the sauce. Pour remaining sauce into a sealable plastic bag and add chicken. Marinate in the fridge over night. Discard marinade.

3. Thread chicken strips on skewers. Grill or broil about 4 minutes per side. Serve with remaining sauce.

What we would/did change:These two recipes taste very similar. The sauce in this recipe is more on the creamy side due to the Miracle Whip. Another family favourite.
