What's Cooking Wednesday - Incredibly Moist Chocolate Cake

So my latest BzzCampaign is for Hellmann's Mayonnaise. Now I have to admit I've always pretty well been a Miracle Whip kind of girl. We never kept mayonnaise in the house, until Michael had some of my Mom's tuna salad and it was love at first bite as they say. My Mom has a secret recipe for her tuna which includes tuna and mayo and that's it I really couldn't tell you about seeing as it's a closely guarded family secret. So after that we kept both salad dressing and real mayo in the house. I have to admit I've never really used mayo beyond the sandwich condiment genre so I was looking forward to starting this campaign. The nice folks at the Central Hive mailed me two jars of Hellmann's... full fat and half fat versions. So I hope you'll bear with me while I try out some "Hellmann's Recipes".

For my first recipe I thought I'd try dessert. Now Mayo cake has been around for years. I know that for a fact because my father in law has talked of little else in the 16 years I've known him. The recipe I have seen previous to this is for a cake made from scratch. This recipe is a bit of a short cut that might be a bit more in tune with our busy lifestyles.

Incredibly Moist Chocolate Cake

1 box chocolate cake mix (500g)
1 cup Hellmann's Mayonnaise
1 cup water
3 eggs

Preheat oven to 350 degrees. Blend all ingredients. Bake as directed on box. If desired frost with choclate icing and decorate with fresh raspberries.


Recipe Notes: Okay so this is everything the recipe claims it to be. It's one moist chocolate cake. Plus because you're using a cake mix base it's really pretty fool proof. I just frosted mine with a can of store bought frosting (shh don't tell my Mom, she's the "from scratch police"). I usually stock up on cake mixes when they're on sale, so this is a nice way to make a cheap cake mix a little more special. Plus you have the added benefit of asking your guests, "Hey you know what I made this cake with?" They'll think you're a real gourmet even if you aren't.

Thanks Julie. That was my hope when I started the posts. It's also been a great motivator for me as well. My family has never eaten so well.
