What's Cooking Wedneday - Deep Dish Turkey Pot Pie

So what do you do with all those turkey leftovers? We usually eat them until we can't stand it anymore and then throw whatever is leftover into the green cart. This year I stumbled across this recipe and figured it would be a good way to reinvent our turkey dinner.

Deep Dish Turkey Pot Pie

1 cup hot water
1 box Stove Top Stuffing for Chicken or Turkey
3 cups chopped, cooked turkey
2 cups frozen mixed veggies, thawed
1 can (10 oz) cream of mushroom soup
1/2 cup of milk

Preheat oven to 375 degrees. Add water to stuffing mix; stir just until moistened. Set aside.

Place turkey and veggies in a 2 L casserole dish. Combine milk and soup, pour over turkey mixture. Stir gently, then top with prepared stuffing.

Bake 30 minutes or until heated through.

Recipe Notes: So this is actually a "new" recipe. Meaning it's not actually for leftovers, but it's simple enough to use leftovers in place of the ingredients listed. It's what I used our leftovers for last night. (Thanks again Mom.) Using leftovers makes this recipe that much quicker and easier. I had it in the oven in under 10 minutes. You can play with this to suit your own tastes as well. Not a fan of mixed veggies, use corn or peas. You could also substitute your favourite cream soup. I actually like using cream of mushroom with onion or garlic for an added kick. Or if you don't have stuffing leftovers, but you do have mashed potatoes you could use that. I think this will be a nice winter recipe to work into the rotation. 5/5
