What's Cooking Wednesday - Slow Cooker Honey Garlic Chicken

This recipe is for Darlene who tells me I don't use my slow cooker enough. She's right I don't. I hardly use it at all. Just for making roast beef, so it probably gets used about 5 times a year. So I've resolved to try and pull it out of the cupboard more than I used to.

Slow Cooker Honey Garlic Chicken

1 tbsp vegetable oil
10 boneless skinless chicken thighs
3/4 cup honey
3/4 cup soy sauce
3 tbsp ketchup
2 cloves garlic, crushed
1 tbsp minced fresh ginger root
1 can pineapple tidbits, drained with juice reserved
2 tbsp cornstarch
1/4 cup water

Heat oil in skillet over medium heat and cook thighs until evenly browned on all sides. Place thighs in slow cooker.

In a bowl mix honey, soy sauce, ketchup, garlic, ginger and reserved juice. Pour into slow cooker.

Cover and cook four hours on high. Stir in pineapple tidbits just before serving.

Mix the cornstarch and the water in a small bowl. Remove thighs from slow cooker. Blend the cornstarch mixture into remaining sauce to thicken. Serve over chicken.

Recipe Notes: Well the only changes I made was to serve the pineapple on the side. Mike's not a big fan of pineapple so to keep him happy I didn't mix it in the sauce. Oh and the sauce, there is a lot of it. Lucky I had made rice to go with this so it was a nice sweet sticky sauce to drizzle over the rice. This recipe wasn't amazing, but it was good. We were both very happy with the results and even Abby managed to eat her agreed upon 3 bites before requesting Cheez Whiz on toast. So I'd call it a success. 3/5
