What's Cooking Wednesday - Baked Potato Soup

As requested by Darlene, I give you more soup. Just when I thought soup season was coming to an end, what with the warmer temperatures and all, here comes winter again. As I write this the snow is falling and falling and falling. Winter boots and snowpants for the kids tomorrow.

Baked Potato Soup

12 slices of bacon
2/3 cup butter
2/3 cup flour
7 cups milk
4 lrg baked potatoes, meat scooped out and toss the peels
4 green onions, chopped
2 cups shredded sharp cheddar
1 cup sour cream
1 tsp salt
1 tsp ground pepper

Brown bacon, crumble and set aside. In a large pot melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil stirring frequently. Reduce heat and simmer 10 minutes. Add bacon, sour cream, salt, pepper and cheese. Continue cooking until cheese melts.

Recipe Notes: Well Mike loved this even though he had asked me to make a beef barley soup instead. For that reason alone he'd already geared himself up to be less than impressed with it, but it's just way too good not to love it. I can think of nothing that would make this even a little bit better. Mike actually thinks this tastes more like perogies than baked potatoes and he's not half wrong. This was also a hit with Maya, but Abby wouldn't try it although she did promise to eat it when she's older. 5/5
