what's cooking wednesday - chicken piccata

Okay I think it may be possible that I am addicted to allrecipes.com. I find myself there more and more just aimlessly surfing and seeing what I can come up with. This recipe caught my eye because as some of you know Mike's other wife is of the Italian persuasion and this kind of thing keeps the rivalry between us going. Who can make the best chicken piccata and win Mike's heart for good?

Chicken Piccatta


Chicken Piccata

4 skinless boneless chicken breasts
1 egg
3 tbsp lemon juice
1/4 cup all purpose flour
1/8 tsp garlic powder
1/8 tsp paprika
1/4 cup butter
2 tsp chicken bouillon powder
1/2 cup boiling water

In a small bowl, beat the egg together with one tbsp lemon juice. Set aside.

In a shallow bowl or dish mix together the flour, garlic and paprika. Dip chicken in the egg/lemon mixture, then in the seasoned flour.

In a large skillet melt butter and brown the chicken pieces.

Dissolve the bouillon in boiling water then add the remaining 2 tbsp of lemon juice. Pour liquid into skillet. Cover and let it simmer for 20 minutes, turning chicken pieces after 10 minutes, until chicken is tender.

Recipes Notes: This turned out quite well and was a big hit at our house. I served it with some whole wheat pasta and a nice jarred gourmet sauce. The only thing I can recommend here is to pound your breasts out a bit. 4.5/5
