What's Cooking Wednesday - Creamy Chicken Lasagna

I love surfing around allrecipes.com and just seeing what I can find. I'm not really sure how I came across this recipe there because I certainly wasn't looking for a lasagna recipe. I mean, I don't want to brag, but do make one kick ass lasagna which has taken me a few years of tweaking to get it to the level of utter perfection that it is now. So I was really not in the market for a lasagna recipe and yet here we are. I'm not sure what caught my interest about this recipe, but it was very likely the cream cheese.

Cream Chicken Lasagna


Creamy Chicken Lasagna

3 boneless, skinless chicken breasts
6 uncooked lasagna noodles
1 cube bouillon
1/4 cup hot water
1 brick of cream cheese, softened
2 cups shredded mozzarella cheese
1 26 oz jar spaghetti sauce

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 8 - 10 minutes or until al dente. Drain, rinse with cold water and set aside.

Meanwhile, place the chicken in a saucepan with enough water to cover and bring to a boil. Cook for 20 minutes or until no longer pink in the middle and juices run clear. Remove from saucepan and shred.

Preheat oven to 350 degrees F. Dissolve bouillon cube in hot water. In a large bowl mix the chicken with the bouillon, cream cheese and one cup of mozzarella.

Spread 1/3 of the spaghetti sauce in the bottom of a 9 X 13 baking dish. Cover with the half the chicken mixture. Top with three lasagna noodles. Repeat one time. Top with remaining sauce and srpinkle with remaining mozzarella.

Bake for 45 minutes in preheated oven.

Recipe Notes: The only thing I did different here was to use oven ready lasagna noodles. I don't think I'd make lasagna anywhere near as often as I do if I had to boil the noodles. The only other change I might suggest is to try a flavoured cream cheese. I'm thinking herb and garlic or roasted red pepper would be good. It was great as is, but that just might kick it up a notch. 5/5
