what's cooking wednesday - pizza pasta salad

I was actually going to post this recipe a few weeks ago, but in the very same day my What's Cooking Wednesday BFF sognatrice posted
this over at her blog, bleeding espresso. Actually I thought it was kind of funny because we seem to have so much in common and here we were with similar recipes on the same day. However, when I read this..... well the idea of posting my recipe made me a little nervous.

And please, please, please resist the temptation to use Italian dressing, which is how I always had this in America.


Since I'm using Roasted Red Pepper dressing, maybe she'll let me off on a technicality.

Pizza Pasta Salad

3 cups penne pasta , cooked, drained and cooled
4 medium tomatoes, chopped
1 cup mozzarella cheese, shredded
12 slices salami, chopped
1/2 cups chopped fresh basil
1/2 parmesan cheese
1/2 cup Kraft Roasted Red Pepper dressing

Toss all ingredients in a large bowl. Cover and refrigerate for one hour before serving.

Recipe Notes: This is another one of those recipes that you can adjust to your own tastes. More cheese? More basil? Sure go nuts. What's it going to hurt? Occasionally my grocery store will be out of fresh basil (I know, the horror) so I just substitute a few shakes of dried basil. I'm not a huge fan of salami so some times I'll use turkey pepperoni instead. This recipe is great summer dish and a nice change from traditional pasta salads.

Hee hee; you're totally off the hook. That request only applied to the pasta salad recipe I posted on my blog--I was just encouraging those that might try my recipe to keep it real, so to speak.

This looks fabulous--I love roasted red peppers. Needless to say, we don't have any kind of dressings around here, though, so I'll have to whip up my own roasted red pepper dressing...hmm....
