what's cooking wednesday - shepards pie

Well it's good to be back. Did you miss me? I certainly didn't mean to let all my What's Cooking Wednesday fans/friends down, but for some unknown reason I could not get onto blogger last night. I was not happy about it, but apparently whatever was wrong has fixed itself, thank goodness. So we'll call this week's WCW the better late than never addition.

Okay this recipe I very well could have read off the side of a soup can and I have likely added my own touch to the recipe over the years. It is one of the ultimate comfort foods. A great fall or winter dish and, best of all, it's easy.

Shepard's Pie

1lb ground beef
1 can cream of (whatever) soup
2 handfuls of frozen mixed veggies
2 1/2 cups mashed potatoes
3/4 cup grated cheddar cheese

Brown ground beef in a pan until fully cooked. Add frozen veggies and soup, stir. Place meat mixture in the bottom of a 9 inch square casserole dish. Top with mashed potatoes and cheddar cheese. Bake in a 375 for 20 minutes or until cheese is melted.

Recipe Notes: Now I usually like to use cream of mushroom with onion and garlic soup, but your favourite cream soup would work. Don't be afraid to mix up the veggies either. This just happens to be the combination that Michael enjoys.
