Okay now onto the business at hand, what you're all here for... the food. First or I guess it would be second at this point I have a little announcement to make. I came up with What's Cooking Wednesday on a whim at the dinner table one night with Mike. I was frustrated and bored with cooking the same things for dinner night after night. This upset me because I do enjoy to cook, but it was slowly becoming something I didn't love so much. So I created myself a little homework project, try a new recipe every week and blog the results. I have to admit I really wasn't expecting much from it. Heck I wasn't even sure I'd keep it up long term, but here we are over a year later. That's a lot of tested recipes. Then other people started playing along, which absolutely floored me. All of the sudden I realize I have a blog carnival on my hands and that's pretty great. So I thought it was time we added some bells and whistles. So I designed this badge for all my What's Cooking Wednesday participating friends. Please feel free to use it in your What's Cooking Wednesday posts. I'm also going to be adding a Mr Linky so you can all enter your own links. I hoped to have it up for this week, but we'll try for next week. And now onto the food. For reals.
Cheater's Chicken Caccitore
6 boneless skinless chicken breasts
1 (28 oz) jar spaghetti sauce
2 green bell peppers, cubed
8 oz fresh mushrooms, sliced
1 onion finely chopped
2 tbsp minced garlic
Put chicken in the slow cooker. Top with spaghetti sauce, peppers, mushrooms, onion and garlic. Cook on low for 7 - 9 hours.
Recipe Notes: I have to be honest with you, they aren't all winners and I thought this was just okay. I'm not really a huge fan of chicken breasts in the slow cooker. They always seem a little chewy. I really loved the convenience though. I threw everything in the slow cooker the night before and left it in the fridge. The next morning I dropped the liner in, turned it on and when I got home I only had to boil the pasta.

I wonder if it would improve the recipe if you used skinless (but bone-in) chicken thigs. They stay way juicier in a slow cooker.
I went back and read your post from 2005 about Papa Joyce. She sounded like an amazing person and someone everyone would want in their lives.

I actually thought the same thing Karen. I've only done thighs in the slow cooker a couple of times, but they did turn out better than when I've done breasts. And yes Papa Joyce was amazing. We miss her so much.
Michelle & bello glad you love the button. I may redesign it at some point, but since I'm in a baking sort of mood these days it seemed to fit.
