what's cooking wednesday - peanut butter and jam sandwich muffins

Well it's that time of the week again. I don't quite know how it ended up being Wednesday already, but I'll take it. I've been trying out a new strategy in which I bake something on Sunday that will last us at least through the week for lunches and/or snacks. So far it's been working out well provided I get my newly baked good packed away in the freezer ASAP otherwise the seem to disappear rather quickly.

Peanut Butter and Jam Sandwich Muffins

1 egg
1 cup Kraft smooth peanut butter
1/4 cup oil
1/2 cup firmly packed brown sugar
1 cup milk
1 cup flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp strawberry jam
2 tbsp smooth peanut butter

Preheat oven to 400 degrees. Beat egg, 1 cup peanut butter and the oil in a large bowl with a wire whisk until well blended. Add sugar; mix well. Gradually add milk mixing well after each addition; set aside. Mix flour, baking powder, baking soda and salt. Add to peanut butter mixture; stir just until moistened.

Spoon just enough batter into each of the 12 paper lined muffin cups to cover the bottom of the cup. Spoon 1/2 tsp each of the jam and remaining peanut butter over batter in cups. Cover evenly with remaining batter.

Bake 15 minutes or until lightly browned.

Recipe Notes: Well this ended up being a deliciously moist muffin. Of course this is considered contraband at school what with all the food allergies we parents need to be concerned with. I think next time I may skip the jam part altogether. I think they'd be just great without having to fiddle with that sticky sticky jam.
