What can I say? It's cold outside. That means it's time for soup.
Canadian Onion Soup
3 tbsp canola oil
4 lbs sweet onions thinly sliced
3 cloves garlic, minced
1/2 cup pure maple syrup
1 carton (900ml) beef broth
1 tbsp chopped fresh thyme leaves
salt and pepper
6 slices baguette, toasted
2 cups shredded old cheddar
Heat oil in a Dutch oven set over medium heat. Add onion and cook, stirring frequently, for 30 minutes or until caramelized. Add garlic and cook for 30 seconds. Stir in maple syrup.
Add broth and half of thyme, bring to a boil. Reduce heat and simmer for 20 minutes. Season to taste with salt and pepper. Preheat boiler.
Divide soup between 6 oven proof bowls. Top wit toast slices and equal amounts of cheese. Broil for 2 -3 minutes or until cheese melts and lightly browns. Garnish with thyme and serve.
Recipe Notes: Well this was different. We both actually enjoyed the first few bites, but the more you ate the more the maple syrup became the dominant taste. If I were to make it again I would cut the syrup by half, at least. Odds are that won't be an issue since we both agreed there was no real need to mess with a classic.

What's cooking Wednesday was born out of a desire to get out of that what's for dinner rut.
