what's cooking wednesday - heather's baked beans

After a lifetime of hating beans of any kind Michael has suddenly developed a taste for baked beans. It started with an appreciation for the maple flavoured bean sin a can and then.... Then we ended up at a belated Thanksgiving dinner at my brother's. Also in attendance, my sister-in-law's family. More specifically her sister Heather, who is one of my favourite people. Heather's contribution to the meal was baked beans and one small taste and Michael was in love.

Heathers Baked Beans


Heather's Baked Beans

2 cans baked beans in tomato sauce
2 tbsp mustard
6 tbsp ketchup
2 tbsp molasses
1 small onion, chopped
1-2 stalks celery, chopped
3/4 cup brown sugar
3 - 4strips of bacon cooked crisp

Put all the ingredients except the bacon in a casserole dish. Stir until well combined. Place strips of bacon on top. Bake at 325 degrees for 45 minutes.

Recipe Notes: I like to make this when we're having baked ham or roast chicken. Last night I actually threw all the ingredients in a roasting pan and cooked in with indirect heat on the barbecue while my drunken chicken grilled away at the other end. The only small change I make is to omit the celery only because we never have any in the house. It doesn't seem to harm the recipe in any way.

This is *very* similar to my mom's recipe, which I absolutely love and just made a few days ago--I'll post it at some point too b/c since we don't have any kind of beans in tomato sauce here, I had to make them from scratch and they came out just as tasty :)

Certainly this recipe would bring love from my boys, too, Shan. Anything with maple and bacon and they're hooked!

BE - Heather did give me instructions for making it from scratch, but I've misplaced them. Probably because the odds are low I'll ever make them that way.
