what's cooking wednesday - baked italian style meatballs

I really do enjoy spaghetti and meatballs, but we rarely have it since I find meatballs such a pain in the ass to make. Also I am too cheap to shell out almost ten bucks for the premade frozen ones when it's something I can so easily make myself for a fraction of the cost, but then see item number one. It's a vicious circle. Then I stumbled upon this recipe in my Kraft What's Cooking magazine and it seemed pretty easy.

Baked Italian Style Meatballs

1 pkg Stove Top Stuffing for chicken
2 lbs lean ground beef
1 1/4 cups of water
2 eggs lightly beaten
2 cloves of garlic, minced
1/3 cup grated parmesan cheese

Preheat oven to 400 degrees. Place all ingredients in a large bowl and mix until well blended.

Shape 24 meatballs, using 1/4 cup of the meat mixture for each meatball. Place in a single layer on a foil lined baking sheet.

Bake 20 minutes or until cooked through. Serve with your favourite sauce and pasta.

Recipe Notes: So sure, these are some huge meatballs, but they stay nice and moist. Also, they retain their round shape much nicer than my old tiny pan fried meatballs. The stuffing gives these a nice flavour and I love that I just pop them in the oven and forget about them. I would actually be tempted to make a couple of batches and freeze them (in their raw state) so they're handy to just pop in the oven for a quick meal. I made these tonight for tomorrow's dinner so I'll let you know if they pass the "kid test".

I hear you.

I love meatballs too. But I live alone and most recipes yield too many.

Luckily in Rome there are butchers nearby who have excellent "polpette" and can buy only four.

I also love meatballs and have not made them since leaving the states over 15 years ago. I know my husband adores them so maybe I will surprise him with these.

I really only started liking meatballs when making them in the oven -- cooking them in a pan is just way too much trouble, and they always break. This recipe looks delicious.

Sounds great! I actually love Stovetop stuffing, which would horrify my mother who would never allow such a thing in the house...ah the loveliness of being an adult ;)

Btw, LOVE the new look! I don't know how new it is since I haven't been around in far too long, but really, it looks *awesome* :)
