what's cooking wednesday - peanut butter and jam tarts

Remember when I cheated and used frozen tart shells to make these delicious tarts? Well on the side of the box was the recipe for these yummy easy to make little tarts. And any recipe that calls for peanut butter, jam and cream cheese is good with me!

Peanut Butter and Jam Tarts

1 pkg Tenderflake mini tart shells (or make your own pastry)
4 oz cream cheese softened
1/2 cup smooth peanut butter
3 tbsp unsalted butter
3 tbsp packed brown sugar
1 cup whipping cream
1 tsp vanilla
3/4 cup grape jelly or jam
chocolate shavings to garnish

Prepare mini tart shells as per package directions. Remove from oven and set aside to cool.

In a medium bowl using a hand mixer beat together cream cheese, pesnut butter and butter until smooth. Add brown sugar and mix well.

In a separate bowl, whip cream with vanilla. Fold into peanut butter mixture.

Spread grape jam or jelly in the bottom of cooked and cooled tart shells. Spread the peanut butter mixture on top. Cover and chill until ready to serve. Sprinkle chocolate shaving on top of the tarts before serving.

Recipe Notes: These were so easy to make and so very yummy. They did not last long at all. To make them even easier put the jam into a ziploc bag (btw the way I used triple berry jam since I had no grape jelly), snip the corner off and pipe the jam in. Faster and way less mess. You can do the same thing with the peanut butter mixture. And I sprinkled the chocolate shavings on as soon as I made them. I don't think it's necessary to wait. They will be making their way onto my goodie tray this Christmas!
