So we're back to soup. You can all blame Grandma Linda who bought me a cookbook that's all about the soup.
Turkey and Bacon Chowder
5 slices of bacon, diced
1/2 lb ground turkey
2 1/2 cups sliced mushrooms
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped red pepper
1/4 cup finely chopped green onion
5 cups turkey or chicken stock
3 cups chopped unpeeled potato
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
1/2 cup frozen corn
1/4 cup flour
1 tbsp dijon mustard
3/4 cup evaporated milk
Cook bacon in a large saucepan on medium until crisp. Transfer to paper towels to drain. Set aside.
Heat 1 tsp of bacon drippings in same saucepan on medium heat. Add turkey and cook until no longer pink.
Add the next 5 ingredients. Stir and cook for about 5 minutes until the vegetables are softened.
Add next five ingredients. Stir and bring to a boil. Reduce heat to medium low. Simmer, covered for 15 - 20 minutes, stirring occasionally until potato is tender.
Add corn and bacon.
Combine flour and mustard in a small bowl. Stir in evaporated milk until smooth. Slowly stir into soup. Heat and stir on medium heat for about 5 minutes or until soup in slightly thickened.
Recipe notes: We both enjoyed this, although Mike wasn't overwhelmed by it. The kids refused it, of course. This didn't come out thick enough for my liking. Not that I was surprised, the roux seemed a little thin to me when I mixed it up. I was also expecting more flavour from the mustard. There wasn't. I'll be increasing that next time around as well.

That looks lovely :) I keep meaning to let you know -- I just looked at Rachael Ray's new Big Orange Book and get this -- she has FOUR recipes based on buffalo wings. There's buffalo burgers, buffalo sloppy joes, buffalo chicken pot pie and buffalo chicken mac and cheese.
