what's cooking wednesday - white chocolate glaze

Tonight was Scrabble Night with Grandma Sandi. I love Scrabble and so does Grandma Sandi, so her Grandparent's Club is the Scrabble Club. Once a month we get together for dessert and coffee and a game of Scrabble. Tonight I busted out my award winning chocolate cake, but mixed things up by drizzling a very yummy white chocolate glaze over top. Oh it was simply perfection.

White Chocolate Glaze

1/2 cup white chocolate chips
2 tbsp butter
2 tbsp corn syrup
1 - 2 tsp hot water

Heat chocolate chips, butter and corn syrup in a saucepan over low heat, stirring frequently, until chocolate chips are melted. Cool about 10 minutes.

Stir in hot water, 1 tsp at a time until consistency of a thick syrup. Glazes one bundt cake or the top of a 8 inch layer cake.

Recipe Notes: Well I doubled this so I could pour some in between the layers and wow! It really brought this very yummy cake to an entirely new level. I think next time I may make it a bundt cake. My layer cake was a bit uneven. Something that's a bit easier to hide with frosting. Or I should just ask Grandma Linda for advice, since it was very much like the white chocolate torte she makes. Now that I can make it myself -- well that's just going to be dangerous.
