what's cooking wednesday

Another easy recipe I am annoyed I didn't find until the end of summer. Here's hoping the weather stays nice enough for barbecuing for a little while yet.

Blue Cheese Coleslaw

Bagged coleslaw mix (or grate up your own... it's your party, go nuts!)
Ranch salad dressing
blue cheese crumbles

Empty the bag of salad into a large bowl. Add ranch dressing until you reach the desired consistency. Sprinkle in blue cheese crumbles, to taste, toss and serve.

Recipe Notes: I stumbled across the recipe at some point during a mindless internet surfing session. The original recipe recommending putting the slaw in a burger dipped in wing sauce. We tried it and it wasn't great. So we tried it again with *chicken* burgers and it's one of our new favourite dinners. And the great news is, the entire family loves chicken burgers! Winner winner, chicken dinner!
