One of my birthday gifts from my beautiful mother was Jamie Oliver's Food Revolution Cookbook. It's a great looking book with fantastic recipes that I can't wait to try out. And as MyPie was harassing me for pancakes I seemed to remember the fabulous Scattered Mom tweeting about Jamie Oliver's one cup pancakes. So I grabbed my book and sure enough there they were.
Jamie Oliver's One Cup Pancakes
1 egg
1 cup flour
1 cup milk
1 tsp baking powder
pinch of salt
Mix the egg and milk together. In another bowl mix the flour, baking powder and salt together. Next add the milk mixture to the flour mixture and mix. Melt a bit of butter in a non-stick pan and cook them pancakes.
Recipe Notes: Well these were just super easy to make. So easy that Maya actually made them herself. I helped her a bit with the measuring, but she dumped everything in and mixed it all up. Then I took care of the cooking, because, you know..... she's four. This will definitely be my go to pancake recipe now. No more boxed mix for us.

Yeay for pancakes :) I love them
We always use some yeast in the flour or buy "self-rising" flour...but our pancakes are crepes so really thin and then we eat stacks of them :p
Wonderful! I'll try this one out, too. Some things are so simple, it's embarrassing that we've been brainwashed into thinking they ~would~ be hard and you need to buy the boxed versions.

These look great! How awesome that you received Jamie's cookbook! Lucky :) I will have to try these - we usually use a mix for 2 reasons. 1. the mix we use does not have any eggs or milk needed and we have a food allergic son and 2. because they are made from Kamut Khorasan Wheat which is so incredibly nutritious! I think I could do these though using my own Kamut flour with egg replacer - thanks!!
A. Thanks for sharing that recipe; I know this won't surprise you, but there are no pancake mixes in Italy, so I'll definitely give this one a go!

Goofball - You could use self rising flour. In fact the recipe in the book calls for self rising flour, but baking powder works too.
Normie - So simple. I mean I know pancakes from scratch are pretty easy anyway, but these... they take just as long to whip up as a boxed mix does and you don't have to deal with the box. I hate pouring pancake mix out of the box.
