what's cooking wednesday - maple caramel bread pudding

I had never made bread pudding before, but I know it's on Papa's list of "desserts he enjoys" so I thought I'd give it a go for his treat of a month this time around. I guess it was good because I didn't manage to get a picture of it before he whisked it right out the door.

Maple Caramel Bread Pudding

  • 8 slices cinnamon bread
  • 2 eggs
  • 1 egg white
  • 1/3 cup white sugar
  • 1 1/2 cups 2% low-fat milk
  • 1/2 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 6 tablespoons fat-free caramel sauce

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cut bread into 3/4 inch cubes. Arrange pieces in a baking dish. Whisk together the eggs, egg white and sugar in a bowl. Stir in the milk, syrup, cinnamon, nutmeg, and salt. Pour mixture over bread.
  3. Bake in preheated oven until lightly browned on top and middle is set, about 40 minutes.
  4. Warm the caramel sauce; drizzle over the bread pudding before serving.
Recipe Notes: I made my own cinnamon raisin bread for this, so that's an option if you don't want to buy a loaf of bread. Not all of my bread was covered by the egg mixture, so the tops bits were crunchy. Papa said it can go either way, but I think next time I would make sure it was all covered by the liquid, even if I had to make a double batch of it. I think it would be nicer that was. Also I didn't have any caramel sauce so we warmed up some of the apple cinnamon syrup I made and had a drizzle of that over top. It was very tasty and I will certainly make it again.
