Oven fried chicken
Preheat oven to 400 degrees.
Take a half a cup or so of flour and put it in a shallow dish. Season it how you like. I used some fresh ground pepper and garlic.
Crack an egg in a separate shallow dish and give it a quick whisk.
In a third shallow dish put about a cup of bread crumbs. Season how you'd like. I had seasoned bread crumbs already in the pantry so I used those.
Now I had boneless skinless thighs thawed, so I used those. Dip in the flour and turn to make sure the chicken is coated. Shake off the excess and dip the chicken into the beaten egg. Shake off the excess and dip into the bread crumbs.
Arrange on a baking sheet and bake at 400 for 30 minutes.
Recipe Notes: This is loosely based on a recipe from the Eat, Shrink and Be Merry cookbook. The chicken was nice and moist and the coating just crunchy enough. Both kids loved it. Win win win in my books. I ate mine with a drizzle of hot sauce because that's how I roll.
