Peanut butter granola bars
1 cup light peanut butter
1/2 cup honey
1/4 cup oil
2 cups large flake rolled oats
1/2 cup *each* wheat germ, raisins and dried apricots
Preheat oven to 350 degrees F. Mix peanut butter, honey and oil together until well blended. Mix in the remaining ingredients and press into a 9 inch square pan and bake for 25 minutes or until golden brown. Allow to cool before cutting into bars.
Recipe Notes: Mike says these remind him of those really hard granola bars we used to get we were kids. The taste anyway, there are on the soft/chewy side. They are a great little after school snack since they can't go to our nut free school. I will definitely make these again and again.

My kids won't eat peanut butter - how annoying is that? I keep forgetting to tell you, I answered the email you sent me a while back but it keeps getting bounced back, not sure why. I'll try to resend it again.
