what's cooking wednesday - grilled cheesy appetizer

We had friends coming over for a evening of conversation and visiting and minutes before they walked in the door I remembered seeing this recipe in the latest What's Cooking Magazine. I'm going to apologize in advance for the picture. I snapped a quick one with my cell phone just as I brought it in.

Grilled Cheesy Appetizer

1 brick cream cheese
1/4 cup diced onion
1/4 cup diced tomatoes
grated mozzarella
Greek feta and oregano salad dressing

Preheat your barbecue to medium high heat. Make a little tray out of tinfoil. I used double thickness and rolled the sides up to keep things from rolling off. Place the brick of cream cheese in the center. Top with onion, tomato, a good handful of mozzarella and a fairly generous drizzle of salad dressing. Place your tinfoil tray on the barbecue and leave it until the cheese is melted and the cream cheese has softened. Serve with crackers.

This was fantastic. I threw it together in minutes and it didn't require me to babysit the grill while it was cooking. This recipe is only limited by your imagination. You easily change the toppings or the dressing or the cheese. It was a huge hit and I can see making this lots over the summer.
