What's Cooking Wednesday - Mix in the Pan Strata

This recipe is all kinds of good. It's great for dinner, breakfast or brunch. This is one the whole family loves, even Abby who hates eggs normally. Although she did eat scrambled eggs with cheese this week.

Sorry folks, I have no kitchen tip to offer this week.

Mix in the Pan Strata

4 Eggs
1 1/2 cups milk
1 box Stove Top Stuffing Mix (any flavour)
1 cup chopped ham
1 cup chopped green pepper
1 cup shredded cheddar cheese

Preheat oven to 350 degrees.
Mix eggs with milk in a 9 inch pan (square baking dish).
Stir in stuffing, ham, peppers and cheese.
Bake 40 minutes or until set.

What we would/did change: This recipe is super quick and easy to make so I make it a lot. Plus you only dirty one dish since you mix it in the baking dish. I recommend greasing the pan a bit. The other thing I love about this recipe is it's versitility. I changed this recipe so it reads one cup of meat, one cup of veggies and one cup shredded cheeese. This particular picture is bacon (I cooked the bacon prior to mixing it all together), mushroom and cheddar. Ham, onion and swiss is a good one. Sausage, onion and cheddar. I have on occasion gone meatless and made it with mushroom, onion and cheddar. Oh the possibilities are endless.

Me: What score would you give the strata?
Mike: Four and a half. It's my favourite.
Me: Well if it's your favourite why doesn't it get a five?
Mike: Because you make me eat it hot.

This is the twisted logic I live with.
