Well this week's edition brings us another recipe featuring Hellmann's mayonnaise. In my house mayo has long since been button holed into the condiment category. This BzzCampaign has really helped to broaden my Hellmann's horizons.
Salsa Chicken Kabobs
1/2 cup Hellmann's Real, Light or Ultra Low Fat Mayonnaise
1/2 cup salsa
1 lb boneless skinless chicken breasts cut into pieces
1 red pepper cut into 1 inch pieces.
In a medium bowl combine mayo and salsa. transfer half of the may salsa mixture to a small bowl; cover and refigerate. Add chicken pieces to the remaining may o mixture and coat well. Cover and let stand for 30 minutes at room temperature or 2 hours in the fridge.
Alternately thread chicken and peppers onto metal skewers. Grill over medium heat turning occasionally until cooked. Serve with refigerated mayo salsa mixture.
Recipe Notes: This was a big hit at our house. Mike was surprised that I had made this with mayo. He thought, for sure, it was sour cream. The salsa/mayo mixture had a nice creamy taste. We agreed that it would be a nice addition to sandwiches or wraps. Instead of cutting up chicken breasts and peppers I bought chicken fillets and just threaded the skewers with the meat. I made grilled vegetables (peppers, 'shrooms and onions) on the side along with a baked potato. I loved that this was such a simple recipe for a marinade using ingredients that are almost always present in my house. Extra bonus points because it's quick. Only 30 minutes on the counter before you throw it on the grill.

Mike: I don't know.
