What's Cooking Wednesday - Rustico Pizza

So the Hellmann's Mayo project continues. It's actually been a very interesting experience. Who knew you could make so many great things with mayo? I certainly didn't. I think it's safe to say that the mayo will be coming out of my fridge a lot more often in the future. No more waiting around for sandwiches to be made.I found this weeks recipe at hellmanns.ca and it immediately caught my eye for a couple of reasons. The first being it's pizza and who doesn't love pizza? Secondly it's pizza. Mayo on pizza? Who would have thought. I don't' know about you, but I get bored with pizza. We do eat it a fair bit since it's Mike and Abby's favourite food and we do eat all kinds from various pizza joints, different frozen brands and we've been known to make our own from time to time. The problem with pizza is it's all pretty much the same. Slight variations in taste, but it's always dough, sauce, cheese, yada yada yada.

Rustico Pizza

1 cup smoked ham, diced
1 jar (375 ml) chopped roasted red peppers
1 pkg chopped spinach
1 cup shredded mozzarella
1/3 cup Hellmann's Mayo
1 clove garlic, minced
1/4 cup sun dried tomatoes
1/4 cup fresh basil, chopped
1/4 tsp ground pepper
1 - 12 inch pre baked pizza crust

In a bowl combine ham, peppers, spinach, cheese, mayo, garlic, tomatoes, basil and pepper. Spread evenly over crust. Bake at 450 degrees until browned 20 - 25 minutes.

Recipe Notes: Well what can I say about this, but yum! Y.U.M. I loved this pizza. Loved it. Seriously. Michael, however, liked it only as a friend. Which I'm not complaining about because, more for me. This had a real alfredo type taste to it. Which explains why Mike wasn't a fan. He's not down with alfredo anything. I did leave out the sun dried tomatoes because I find them a tad over powering. I also used garlic powder instead of the minced garlic and dried basil in place of fresh. Was still delish and it made for a little less chopping. I didn't even really measure exactly with this recipe either, just sort of eyeballed it. This is another recipe you could tailor to suit your own tastes. Mushrooms would be a good addition. Maybe a little onion. Oh the possibilities are endless.
