What's Cooking Wednesday - Hot Italian Chicken Sandwiches

It's fall and the kids are back in school. Gone are the lazy days of summer. The days are shorter and busier with school, work and after school/work activities, family obligations and so on. I know a lot of people feel really pressed at dinner time. This recipe is a super quick and easy one. You can have it on the table in 25 minutes. Now who wouldn't like that?

Hot Italian Chicken Sandwiches

4 chicken cutlets
1/2 pouch Shake 'n Bake Original coating mix
1/2 cup pasta sauce
3/4 cup 4 Cheese Italiano shredded cheese

Preheat oven to 400 degrees. Coat chicken in coating mix as directed on package. Place on a foil lined baking sheet.

Bake 15 minutes or until cooked through. Top with sauce and cheese. Bake an additional 5 minutes until cheese is melted. Place chicken on buns.

Recipe Notes: See didn't I tell you it was quick and easy. Just add a green salad and there's dinner. I love this recipe because you can customize it to suit your family's taste. I won't tell anyone if you want to use your own chicken coating recipe instead of the Shake 'n Bake. Or maybe you like Shake 'n Bake, but want to mix it up by using the Southern Fried, Lemon Pepper, Cajun or how about one of the glazes like Teriyaki or Honey Garlic. You can also add toppings like onion, lettuce, grilled veggies. You could lose the tomato sauce. Or change up the cheese. You could make this every week and have it be something different every time. Now that's a great recipe. Even Abby loved this. I just cut her cutlet up into bite sized pieces before I put her bun together. Makes it's a little easier for her to eat . 5/5
