What's Cooking Wednesday - Lemon Cheese Squares & Skor Bars

Just in time for Christmas, check out the two for one What's Cooking Wednesday because folks I'm all about saving you more.

Lemon Cheese Squares

Crust:
1 box Golden Yellow cake mix
1/3 cup oil
1 egg

Mix ingredients together until crumbly. Reserve 1 cup of the mixture. Press into a 9X13 pan. Bake at 350 degrees for 15 minutes.

Filling:
1 250g package of cream cheese
1/3 cup sugar
1 tsp lemon juice
1 egg

Cream ingredients together and put on top of crust. Sprinkle the reserved crust mix on top. Bake for an additional 15 minutes. Cut into bars and serve.

Recipe Notes: This is a recipe I stole borrowed from Auntie Yoli. This recipe is quick and easy, but still mighty impressive. It's a favourite around our house.

Skor Bars

1 cup butter
1 cup brown sugar
1 sleeve premium plus crackers
2 pkgs chocolate chips

Layer cookie sheet with unsalted crackers. Melt butter and brown sugar together over low heat until sugar dissolves. Pour over crackers. Bake at 350 degrees for 10 minutes. Pour two packages chocolate chips over top. Turn off oven. Place cookie sheet back in oven to melt chocolate slightly. Spread chocolate until smooth. Put in freezer (don't cover) for an hour. Then break into pieces.

Recipe Notes: Another quick and easy yet impressive Christmas treat. I don't fallow this recipe to the letter. I usually use salted top crackers and Christmas hasn't been ruined. Also I use one package of chocolate chips and a couple of spoonfuls of butter that I melt on the stop top over low heat. It makes for a smooth spreadable chocolate. The butter and the sugar really bubble up while they are baking so I would think that attempting to add chocolate chips at that point would be one big mess. I prefer to let it cool down and harden before introducing the chocolate. Also line your cookie sheet with tinfoil. It's just easier. Oh and I skip the freezer all together. The fridge works just fine.
