What's Cooking Wednesday - Overnight French Toast

I like this recipe because it can be made the night before and then just baked in the morning, so it's great for a holiday brunch.

Overnight French Toast

1 loaf french bread torn into pieces
2 8oz packages of dream cheese, cut into chunks
1 cup fruit (blueberries, peaches or apples)
12 large eggs
1/3 cup maple syrup
2 cups milk

Grease a 9X13 pan. Place 1/2 of the bread cubes in the pan. Scatter cream cheese over bread. Sprinkle with fruit. Place remaining bread on top.

Combine eggs, syrup and milk. Pour over bread. Cover and chill overnight.

Heat oven to 350 degrees. Bake covered with foil for 30 minutes. Uncover and bake 30 minutes more; until puffed and golden.

Recipe Notes: I found the cream cheese to be way too much in this recipe. I would suggest cutting it by half at least and upping the amount of fruit. Now the fruit can really be whatever you'd like. Don't feel like you have to limit yourself to those three suggestions.

This looks great! Not too big on breakfast food here, but I make it anyway...and I have my maple syrup imported ;)
