Foil Pack Creamy Chicken
1 can (10 oz) Cream of mushroom soup
3/4 cup hot water, divided
1 pkg Stove Top Stuffing
4 small boneless skinless chicken breasts
4 slices smoked ham
1 1/2 cups fresh mushrooms
1 1/2 cup frozen peas
Preheat oven to 400 F. Mix soup and 2 tbsp of the water; set aside. Combine stuffing mix and remaining water; spoon evenly onto centre of four large sheets of heavy duty aluminum foil. Top each with one chicken breast. Cover evenly with ham, mushrooms, peas and soup mixture. Double fold top and both ends to seal packet, leaving room for heat circulation inside. Place on a cookie sheet.
Bake 30-35 minutes or until chicken is cooked through. Remove packets from oven; let stand 5 minutes. Place one packet on each of four dinner plates. Cut slits in foil to allow steam to escape before serving.
Recipe Notes: Okay so I skipped the peas. Only because Michael detests peas. I rather enjoy them, but who am I to argue. Instead I just made some veggies and baked potatoes on the side. The chicken stayed nice and moist, but I was surprised that the mushrooms were still partially raw. Also the ham didn't really add much for me. A bit of crumbled bacon would be nicer or even omitting it all together. 3.5/5

One of my best friends had the same thing with chicken when she was little. As long as you called it chicken she'd eat any meat you offered her. I've never heard of another kid doing that. LOVE it!
