What's Cooking Wednesday - Southwestern Layer Dip

Summer arrived in full force here today, bringing with it our first smog advisory of the season. Cooking was not going to be part of the agenda today folks. This is the perfect summer recipe and an even better "take along" dish for the next barbecue you're invited to. I'm calling it Southwestern Layer dip for lack of a better name because you know if you add barbecue sauce to anything you can get away with calling it southwestern. Originally the recipe had a decidedly more Mexican flavour and as such we called in Mexican pizza. It's not a new recipe by any means, but I think a little tweak to the ingredients gives it new life.

Southwestern Layer Dip

1 brick of cream cheese, softened
2 tbsp sour cream
1/4 cup your favourite barbecue sauce
2 cups grated cheddar
2 green onions, chopped
1 bag nacho chips

In a medium sized bowl warm the cream cheese in the microwave for 30 seconds. Mix cream cheese with 2 heaping tablespoons of sour cream, until well blended. Spread cream cheese mixture onto a medium sized serving platter. Top with barbecue sauce, making sure to spread barbecue sauce to the edges of the cream cheese. Top with grated cheddar and green onions. Chill until ready to eat and serve with nacho chips.

Recipe Notes: This is another one of those recipes that is more of a guideline than anything else. If you'd like your cream cheese base to be a little "looser" then by all means add more sour cream. You can also increase/decrease the amount of barbecue sauce, cheddar or green onions. Don't be afraid to be creative and add different toppings, like tomatoes, green pepper and such. It's easily doubled for a larger platter. 5/5

What's Cooking Wednesday was born out of a desire to get out of that "what's for dinner" rut.
