what's cooking wednesday - citrus pork stir fry

Now I like stir fry in theory and by that I mean if someone else makes it. Plus it's not something Mike is too fond of and don't even get me started on how many things are wrong with a stir fry according to Abby. One of the benefits of being the chief meal planner and cook around here is I get to make whatever I want and they can either eat it or the peanut butter is in the pantry.

Citrus Pork BBQ Stir Fry


Citrus Pork Stir Fry

1 lb thinly sliced pork loin
2 cups broccoli flowerets
2 cups sliced carrots
1/2 of a peeled orange cut into large chunks
1/4 cup Kraft Sweet Onion vinaigrette dressing
2 tsp soy sauce
1/4 toasted cashews

Preheat barbecue to medium high heat. Toss pork, broccoli, carrots, orange, dressing & soy sauce in a bowl.

Poke small holes in the bottom of a large disposable foil pan. Spoon pork mixture. Grill covered for 15 minutes, stirring often until pork is cooked and veggies are tender crisp. Sprinkle with cashews and serve over rice.

Recipe notes: Well I just threw this all in my barbecue wok and cooked it. So if you have one you can skip the foil pan stuff. I liked that this recipe was a quick and easy one to throw together, but it was far from an overwhelming hit here. Even I , who was most looking forward to it, only thought it was okay. Also free will being what it is I swapped out the carrots for onion.

Mike: Meh, you're not going to make it again are you?
Me: Well, it's alright.
Abby: Peanut butter sandwich please.
Maya: I'm just going to keep banging my spoon on my high chair if you don't mind.
