Tucked in amongst the various parcels we received this Christmas from my Mom was a bottle of wing sauce from that famous wing place across the border, Honeys. Now I love the taste of chicken wings, but who wants to go through the hassle of making them at home? Wait that sounded vaguely infomercial-ish. Sorry about that folks, Ron Popeil has not, I repeat, has not hijacked this blog. Basically I was wondering what on earth I could use this sauce for besides wings. Behold, I give you.....
Buffalo Chicken Soup
1 small onion, chopped
2 ribs celery, chopped
1/4 cup butter or margarine
1/4 cup all purpose flour
3/4 cup milk
3/4 cup chicken broth
2 cups diced, cooked chicken
1/4 - 1/2 cup buffalo wing sauce to taste
4 oz velveeta, cubed
1/2 tsp cayenne pepper
1/2 tsp celery salt
1/2 tsp garlic salt
In a saucepan over medium high heat, saute onions and celery in butter until soft. Stir flour into pan. slowly whisk in milk and broth. Stir in rest of the ingredients and simmer over medium low heat, stirring occasionally until the cheese is melted.
Recipe Notes: If you're making this for the first time I highly recommend starting with a little bit of wing sauce and adjusting up from there. I doubled the recipe, but didn't double the wing sauce and Mike found it to be a bit too much, but he's a self proclaimed wimp when it comes to spicy foods. I made only two changes beyond that. One, there was no celery because I didn't have any. It was fine without it, in fact I would recommend skipping it all together. Also I grated up some old cheddar and used that instead of the velveeta. Again, because I didn't have any in the house. I'd say it was a hit since Mike was already asking when we were going to have it again.

That does sound really yummy.
I made this last night, Shan, using a bit less butter, etc., and we LOVED it! I subbed cheddar cheese for the velveeta, as you did. GREAT stuff!
Jen - glad you liked it. Mike was already scoping out the grocery store to make sure we could get more wing sauce when our supply ran out.
BE - the buffalo wings I can understand, but I still have a hard time with the sour cream and cheddar thing.
