what's cooking wednesday - lord of the wings

What's not to love about the new Eat, Shrink and be Merry cookbook? There's great, better for you recipes of all your favourites plus they all have have the funniest names. I just happened to come across this one while I was wondering what to do with the chicken thighs I had in the freezer. Mike, once again was skeptical.

12 large boneless skinless chicken thighs
1/3 cup of your favourite bbq sauce
2 tbsp reduced sodium soy sauce
2 tbsp dijon mustard
2 tbsp liquid honey
2 tbsp freshly squeezed lemon or lime juice
2 tsp minced garlic
1 tsp chili powder
4-5 dashes of hot sauce
1 tsp cornstarch

Preheat oven to 400 degrees F. Spray a 9X13 pan with cooking spray and set aside.

Trim any visible fat from the chicken thighs. Cut each tigh in half and place cut pieces in a single layer in the prepared pan. Fold or roll them up a bit so they resemble wings. They should just fit in the pan. (3 rows of 8 "wings")

Whisk together bbq sauce, soy sauce, mustard, lemon juice, garlic, chili powder and hot sauce in a small bowl. Spoon sauce evenly over chicken.

Bake, uncovered 35 - 40 minutes until chicken is cooked through and sauce is bubbly. Arrange chicken on platter and keep warm. Pour sauce into a small pot. Mix cornstarch with 2 tsp of water, stir into sauce. Bring to a boil and whisk until thick. Serve with "wings".

Recipe Notes: Well we all loved this dish. Well except Maya, but all she really eats is peanut butter sandwiches. This was quick and easy to put together and they actually did look a little like wings on your plate. I will definitely be making this again.

this looks good for the adults in our home, but the hot sauce wouldn't fly with the teens (crazy them!) the title alone is worth a try!

I LOVE their books and I do have ESandBM but I haven't used it much yet (I'm a Crazy Plates girl) but I'll have to try this and get more into the book soon.
