We've been trying to eat more fish around here, which isn't easy when you factor in the fact that I don't like fish. I am trying though. Tuna, I like, so when I saw this in the latest What's Cooking magazine from Kraft I knew I was going to have to give it a try. It took a couple of weeks before this actually made it to the dinner table since Mike kept vetoing it every chance he got.
Tuna Cakes
2 cans (170 g each) white tuna in water, drained and flaked
1 pkg Stove Top Stuffing for chicken
1 cup shredded cheddar
1/2 cup shredded carrots
1/4 cup Miracle Whip
2 tbsp sweet pickle relish
3/4 cup water
Mix the tuna, stuffing, cheese, carrots, dressing, relish and water in a bowl.
Cover the bowl and refrigerate for 10 minutes.
Heat a large non-stick skillet sprayed with cooking spray on medium heat. Scoop tuna mixture, using about 1/3 cup for each cake, into skillet in batches. Gently flatten cakes using a spatula.
Cook 3 minutes on each side or until they're golden brown on both sides, turning cakes over carefully.
Recipe Notes: That's it. Pretty easy. And Mike.... he loved it. Abby was across the street for dinner that particular night, but she wouldn't have eaten it anyway. Maya, I believe, was boycotting dinner for reasons known only to her. Since I forgot to pick up carrots I made it without and it was just fine. This one I will definitely make again.
