what's cooking wednesday - grandma's cheesecake

It's been mentioned here before, but it bears repeating, my Grandmother was an amazing woman. There were so many things she could have been, judgmental, angry, bitter, but she wasn't. She was kind and patient and loving. It's safe to say she gave me more gifts than I could ever realize. One of the biggest things I miss about her is her cooking. She was an incredible cook. I wish I had paid more attention to it when I had the chance. She wasn't an elaborate cook. There were no cheese souffles coming out of her oven. Just great tasting comfort food that you'd expect from a Grandma.

This recipe has been made in our family a kagillion times. It's true. I counted. I don't even have the recipe written down anywhere. I could make it with my eyes closed. Could make it in my sleep. My Grandma would always make this for family dinners and it kept showing up for dessert long after she'd left us. Once I made the mistake of making an actual cheesecake instead only to be met with disappointed relatives. It just wasn't Grandma's.

I apologize that there is no picture. My camera appears to have a mind of it's own and works only when it feels like these days.

Grandma's Cheesecake

1 envelope of DreamWhip
1 brick of cream cheese
2 ready made graham cracker crusts
1 can of cherry pie filling.

Prepare one envelope of DreamWhip according to the package directions. Beat in one brick of cream cheese until well blended. Divide the mixture evenly between the two pie crusts. Top with cherry pie filling, divided equally between the two crusts. Chill for an hour.

Recipe Notes: That's it in a nut shell. It's not exactly a recipe that is going to set the world on fire. I think she got it from the back of the DreamWhip box a kagillion years ago. I'm not really sure. All's I know is it was there without fail for dessert. There have been times when I've monkeyed with the format and used a chocolate pie crust and raspberry pie filling, but in the end I always go back to the basics. Back to Grandma.

It must be that time of year - I posted a "grandma" recipe, too, albeit one that was by my son's grandma, ie. my wonderful MIL. This looks yummy, Shan! I don't know how the heck I missed the past two weeks - I actually participated and everything.

Normie - very good, my friend. I do dislike the cherries. Very much. For some reason though, this I can manage. Don't ask me why. My grandma always made it with the cherries, but when I make it I will sometimes use other pie fillings.
