tangy pulled pork sandwiches
1 pork tenderloin (1 lb)
1 cup ketchup
2 tbsp + 1 1/2 tsp brown sugar
2 tbsp + 1 1/2 tsp cider vinegar
1 tbsp + 1 1/2 tsp worcestershire sauce
1 tbsp spicy brown mustard
1/4 tsp pepper
kaiser rolls, split
Cut the tenderloin in half and place in a 3 qt slow cooker. Combine the ketchup, brown sugar, vinegar, worcestershire sauce, mustard and pepper; pour over pork.
Cover and cook on low for 4 -5 hours or until meat is tender. Remove meat, shred with two forks. Return the to the slow cooker and heat through. Serve on rolls.
Recipe Notes: So this is not pulled pork that you would see in an authentic barbecue joint on a show like Diners, Drive Ins and Dives, but it was still pretty dang good if I do say so myself. I cooked the tenderloin from frozen, on high for about 5 hours. The only tiny change I made was to use dijon mustard since I didn't have any spicy brown mustard. Mike and I both loved this, can't wait to make it again.
