Peanut butter pancakes adapted from this recipe at allrecipes.com
1 cup pancake mix
2 tbsp sugar
1 egg
1/3 cup peanut butter
5oz milk
In a bowl, mix together pancake mix and sugar. In a small bowl whisk together peanut butter, egg and milk. Stir into the dry ingredients and mix until just moistened. Pour 1/4 cup of batter in a greased non-stick pan on medium heat. Flip the pancake over after bubbles start to form.
Recipe Notes: The kids liked this, but I thought it was just meh. The batter burns much more easily then your standard pancake batter. You need to cook these low and slow, which kind of ruins pancakes being a quick and easy dinner. For me they are just a little too fiddly to be worth it.
But like I said the kids liked them.....
