what's cooking wednesday - coffee cake

You may remember I'm spending this month trying out recipes from my Betty Crocker cookbook. Since I owed Papa a dessert I thought I'd see what I could find in here.

Sour Cream Coffee Cake

3 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
1 1/2 cups sugar
3/4 cup butter, softened
1 1/2 tsp vanilla
3 large eggs
1 1/2 cups sour cream

Brown Sugar Filling
1/2 cup packed brown sugar
1/2 cup finely chopped nuts
1 1/2 tsp cinnamon

Vanilla Glaze
1/2 cup powdered sugar
1/4 tsp vanilla
2 - 3 tsp milk

Preheat oven to 350 degrees F. Grease a 12 cup bundt pan. Make the brown sugar filling and set aside. Mix flour, baking soda, baking powder, and salt together in medium bowl.

Beat sugar, butter, vanilla and eggs in a large bowl with an electric mixer on medium speed for 2 minutes. Stopping to scrape down the sides of the bowl, occasionally. Beat one fourth of the flour mixture and sour cream at a time alternately into the sugar mixture on low speed.

Spread one third of the batter in the bundt pan. Sprinkle one third of the brown sugar filling, repeat twice. Bake for 1 hour. Remove from pan. Drizzle with vanilla glaze.

Recipe Notes: this was really great. I would certainly make it again. I used pecans and chopped them up pretty fine. Even I didn't mind the nuts in there and y'all know how I feel about nuts in my baking. Gag.
