This dish is similar to ones I have made before. It's one of Mike's favourites in all it's forms. Not so much the girls though. I'm betting Darlene would love it though, garlic, broccoli, cheese.... all her favourites covered.
Preheat oven to 400 F. Take 1 1/2 lb of boneless skinless chicken breasts, cut into cubes. Place int he bottom of a 9 X 13 baking dish. Sprinkle with 1/2 tsp of garlic powder.
Combine 1 pkg of Stove Top Stuffing for chicken with 1 cup of water. Set aside.
mix 1 can (10 oz) cream of broccoli soup with 1/2 cup of milk and one can of sliced mushrooms, drained. Spread over top of chicken. Sprinkle with 1/2 cup of shredded cheddar. Top with the stuffing mixture. Bake 30 minutes or until chicken is cooked through.
Recipe Notes: The only change I made was to use fresh mushrooms in place of canned because canned 'shrooms are not for this girl. This was very yummy. Great winter casserole dish.

bello - we're big chicken fans here too. That's how I get Abby to eat most other meats. I just tell her it's chicken.
