Mile High Brownie Pie
4 squares semi-sweet chocolate
1/2 cup butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup flour
2 cups cold milk
2 pkg (4 serving size each) Jello chocolate instant pudding
1 tub (1L) Cool Whip Topping, thawed
Microwave chocolate and butter in a large microwaveable bowl on high for 2 minutes or until butter is melted. Stir until the chocolate is completely melted. Add sugar; stir until well blended. Add eggs and vanilla; mix well. Stir in flour. Spread into greased 9 inch pie plate.
Bake at 350 degrees for 30 minutes or until a toothpick inserted in the centre comes out clean. Cool completely on a wire rack. Scoop out the centre of the brownie with a spoon, leaving 1/2 inch rim around edge and think layer of brownie on bottom. Reserve brownie pieces.
Pour milk into a large bowl. Add pudding mixes. Beat with a wire whisk 2 minutes or until well blended. Mixture will be thick. Gently stir in 1/2 of the whipped topping and all but 1/2 cup of reserved brownie pieces. Spoon into brownie crust; top with remaining whipped topping and reserved brownie pieces. Refrigerate 2 hours or until set.
Recipe Notes: This was great. I really enjoyed it, but then chocolate pudding is one of my most favourite things. I wouldn't change a thing really. And it would be incredibly easy to make a better for you version if you used a lowfat brownie mix, low fat chocolate pudding and that almost fat free coolwhip. The only tiny change I made was to serve the extra coolwhip on the side since I've never been a big fan of the stuff on it's own. Will certainly be making this again.

That looks scary-yummy!
Another couple (small) changes to make it diet-like: egg substitute and Splenda. But once you start substituting stuff it takes away some of the yummyness.
