what's cooking wednesday - bbq potato salad

Well the summer is drawing to a close and I think I'm about ready for some cooler weather. And with it some of my favourite colder weather dishes like soup and baked pastas. Yeah I'm ready for true comfort food, but we're not there quite yet so there's still time to try out yet another great potato salad recipe I found thanks to my friends at allrecipes.com.

BBQ Potato Salad

5 lbs potatoes, cubed (no need to peel them)
1 small red onion, diced
6 hardboiled eggs, peeled and diced
1 1/2 cups mayo
1/2 cup barbecue sauce
1/2 tsp garlic powder
salt and pepper to taste
1 tsp paprika (optional)

Place cubed potatoes in a large pot and cover with water. Bring to a boil over medium high heat, then reduce heat to medium low and cover and simmer until potatoes are just tender (15-20 minutes).

Drain and and cool potatoes in the fridge until cold; about 2 hours.

Mix cooled potatoes, red onion, egg, mayo, barbecue sauce, garlic powder, salt and pepper in a large bowl. Sprinkle with paprika if desired.

Recipe Notes; I wasn't really sure about this recipe, but thought I'd give it a go anyway. Mike's not really a huge barbecue sauce fan, but he did enjoy this because the taste of the barbecue sauce wasn't overpowering. I used Diana Maple barbecue sauce. I also left out the eggs because I'm not a huge fan and I really didn't feel like peeling them. This would be great with the addition of some diced crispy bacon. I'll definitely be making this again. It's a nice "new" summer salad to throw into rotation.
