what's cooking wednesday - turkey burgers

Well I think it would be fairly obvious to longtime readers that my blogging mojo is eluding me. It's not a sensation I can say I enjoy, but here we are. I think I'm just finding life a bit overwhelming these days. Mike's time away from the family has increased exponentially in the past couple of weeks and I'm just finding it all a mite difficult keeping all the balls in the air. I am forever grateful for the little gifts, like Papa coming to take the girls to choir practice each week. Even though I could take them myself, I do appreciate the 30 minute break it allows me. Of course I always spend it unloading the dishwasher and tidying up, but still.....

The point of all this is, I'm trying. I am trying to get things back in order. Mike's schedule has quieted back down again for the next little bit. Although we both ended up at a meeting unexpectedly last night.... I'll fill you in on that later. But for now let's focus on what's cooking wednesday.

For the past few weeks our local grocery establishment has been sold out of our favourite chicken burgers. So I grabbed a package of ground chicken and figured I could make my own....

1 lb ground chicken or turkey
1 egg white
1 tbsp soy sauce
1/2 cup bread crumbs
1 tbsp finely chopped onion
1 finely chopped garlic clove
1/4 tsp ginger powder
1/8 tsp pepper

Combine all ingredients in a bowl. Form into four equal sized patties and grill until cooked through.

Recipe Notes: Well I think we may never buy that box of chicken burgers again. One bite into these and Mike was raving about the taste. The girls wouldn't try them. I know, shocking, right? But that just means we get to have them for dinner again tomorrow night.

Hey Shan! I'm back from an enforced absence that sounds like what you might need to do for a bit. It's great to see you again, though. I love chicken/turkey burgers of any type! I hope things get easier for you soon.
