what's cooking wednesday - java marinade

Well I'm still here trying to find interesting marinades to keep all the chicken we eat from getting boring. Even though I think Johnny's Grub Rub is the most perfect dry rub out there for any kind of meat, I still thought I'd give this one a try. I have to be careful when cooking for Michael. If the ingredients in any given dish strike him as a little odd he'll decide right then and there he doesn't like it. So in the realm of my cooking the less he knows the better. Unfortunately he just happened to be hanging around while I put this one together. His comment of..... "so you're going to ruin the entire package of chicken" was my indication this likely wasn't going to go well.

Java Marinade

salt & pepper to taste
1/4 cup onions, chopped
3/4 cup brown sugar
1 tbsp vegetable oil (although some recipes I saw suggested olive oil, so to each his own)
1/2 cup cider vinegar
1 tsp mustard powder
1 cup strong coffee

Mix all ingredients together and store in a glass jar in the fridge. Makes 2 cups. Good for all meats.

Recipe Notes: Well I ended up doing half the chicken this way, the other half I used Johnny's Grub Rub just to keep some peace in the family. Mike had a small taste of it and wasn't impressed and I really have to agree with him. I thought it was okay, but nothing terrific. Definitely no where near as good as the grub rub. The chicken tasted a bit on the sweet side from the brown sugar and there was a faint taste of coffee. Really it just didn't wow me enough to make it again.

Hey, I'm the first this week! I don't know about everyone else, but sometimes it gets a bit hot to cook. Your chicken looks good, but thanks for the tip to stay with the Johnny's. Hard to go wrong that way.

I'm sure I've mentioned this, but Michael and my P sound *very* much alike in their adventurousness. Wish I was closer to try all your recipes ;)

P.S. You must've forgotten to label this one with the WCW label; I noticed it when I went to link here this week and there was nothing for this past week under the label...and I *knew* you wouldn't have missed a week ;)

Renae - thanks, it did look nice, but the taste needed work.
