what's cooking wednesday - greek chicken

Oh my gosh I love Greek food. The other night I was trying to come up with something a little different to do with my usual boring old boneless skinless chicken when I cam across a Greek inspired spice blend in my cupboard.

I made a marinade of that, following the directions on the jar, coated the chicken it in stuffed it back in the fridge until dinner. At which point I tossed it on the ole George Foreman-esque grill. Ours is actually the Griddler brand grill/panini press. While the chicken was doing it's thing I sauted some peppers and onion in a drizzle of olive oil.

After everything was cooked I sliced the chicken and served it on Greek style pitas with the pepper/onion combo, feta and tzatziki and then Mike fell in love with me all over again.

Yeah it was that good.
